TONY'S PICKLED ONIONS

Ingredients:

White vinegar and water - (30% water to vinegar)

1/2 cup sugar

Required amount of small onions

Sprinkling of coarse salt

1/2 teaspoon pickling spices

1 chilli (optional)

 

Method:

Put the water, vinegar and sugar into a pan and bring to the boil - remove from heat and let cool.

Peel onions and place in a bowl.  Sprinkle coarse salt over the onions and leave to stand for about 6 hours (the salt draws the moisture from the onions)

Drain moisture from onions then place the onions in a jar.  Pour the cooled vinegar and water mixture over the onions until covered.  Add pickling spice.  Chop the chilli and add for a more spicy taste.

Store in a cool place for 1 - 2 weeks.
